RECIPE: French Fruit Custard Tart

The Strawberry & Blueberry French Fruit Custard Tart has been one of my favorite dessert recipes to bake for intimate family gatherings and friend get-togethers for the last several years. As you can tell from the photos, this famous tart made its appearance for July 4th this year and my family (and our party guests) LOVED it! Not only is the portion size HUGE to feed a village (jokes, but you get my point), but I love the fact that this extravagant dessert is relatively easy to make! It may look fancy and intimidating, but trust me when I say that the baking process can be done by anybody! Since this fruit tart has been a big hit at EVERY party that I bring it to, I thought it was finally time to share one of my favorite dessert recipes with you all :) You CANNOT find this recipe (let me rephrase that - this EXACT recipe) online so if you want to make this fruit tart exactly the way that I make it from scratch, be sure to keep on reading so that you can bring this dessert to your next holiday party!

French Fruit Custard Tart

Crust Ingredients:
- 1 1/2 cup all purpose flour
- 1/3 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 cup butter (1 stick of butter)

Tart Ingredients:
- 4 egg yolks (the yellow part; dispose of the egg whites)
- 1 1/2 cup sour cream
- 1/3 cup granulated sugar
- 1 1/2 teaspoon vanilla

Fruits:
- any combination of fruits (ex: strawberries, blueberries, nectarines (pitted), kiwi, fresh berries

*Use a 12 inch tart pan with removable bottom

Directions:

1. Preheat oven to 400 degrees.
2. Crumb Mixture: In a food processor or mixing bowl, combine flour, sugar, & baking powder. Pulse once or twice if you are using a food processor. Microwave butter between 10 - 30 seconds until it is soft, but not melted. Add in tablespoons of butter until mixture is reduced to small crumbs.
3. Pour crust mixture into a 12 inch tart pan with a removable bottom and press crust mixture gently over the bottom and half way up the side of the pan. Do not pack crust mixture down too firmly. Bake for 15 minutes (until the crust turns light gold).
4. TART MIXTURE: While the crust is baking, combine egg yolks, sour cream, sugar, and vanilla in a separate mixing bowl.
5. After 15 minutes, remove pan from oven and pour the tart mixture on top of the hot crust.
6. Return pan back into the oven and bake for 15 additional minutes. Remove from oven, cool, and chill.
7. When ready to serve, arrange fruit on top of custard.
